Utah may be historically homogeneous, but it is the 4th most rapidly diversifying state in the nation.  For example, between 2000 and 2004, 41 percent of Utah's population increase consisted of minorities - most of them Hispanics.  Most of Utah's in-migrants are minorities thus significantly changing Utah's demographic make-up.
